In the unassuming surroundings of Affligem’s world famous brewery in a former monastery, Affligem undertakes a process known in rarefied vineyards as méthode tradiotionelle. For fourteen days they leave the bottles filled with beer to rest, after adding small amounts of sugar and yeast. In a warm cellar, as the yeast converts the sugar into alcohol, the beer is transformed into a stronger, more deeply flavoured, effervescent nectar. Any off-notes are taken away, as oxygen is eliminated from the bottle. Affligem’s yeast is flocculating so it gathers and sinks to the bottom of the bottle, making Affligem beer brighter and clearer than most fermented beers. A swift swirl releases the yeast, for those who like to drink ‘body’ and ‘soul’ together.
