Le Val d’Amblève is located at the edge of Stavelot, one of the oldest cities in Belgium in the heart of the forests of Liège’s Ardennes.
The guest rooms are located in the stylish main building, the modern annexe and Le Jardin des Princes. The large picture windows offer beautiful views over the rolling hills surrounding the hotel. The hotel has a sauna and Turkish bath with a panorama roof terrace.
Dutch couple Ruud and Marion Roxs oversee Le Val d’Amblève. Ruud is also chef. His classic French-Belgian menu is exquisite, light and contemporary. The dining room is in the sun room. The stylish romantic interior offers beautiful views over the parkland garden, both in the evening and during the day.
Liège’s Ardennes and the small town of Stavelot offer numerous interesting sights. In the centre of Stavelot is a beautiful monastery housing three different museums. The museum of the nearby Race Circuit Spa-Francorchamps is probably the most notable.
Host Ruud Roxs is a renowned chef, who worked for many Dutch top restaurants, such as De Wanne (QL Hotel De Wiemsel) and De Karpendonkse Hoeve. His cuisine can be described as classic French/Belgian with a light modern twist. The restaurant is stylishly contemporary with a romantic touch, but not too formal. Garden & Terrace
Le Val d’ Amblève has an extensive lush garden. From the garden the view of the surrounding Ardennes hills is quite unique. Lunch and dinner are, weather permitting, served on the spacious terrace.
Stavelot is one of Belgium’s oldest towns. It is also known as ’the green pearl’. The lovely town and its abbey are steeped in history. Both the town and its abbey are certainly worth a visit. For relaxation, the Spa health resort is recommended. The folklore festival Laetare is held in Stavelot every year in March or April.
