Chef Maxime Collard, of La Table de Maxime, opened his second hotel in his native village Our, in the Belgian Ardennes. The modern five storey building is constructed against a hillside. An architectural masterpiece, full of modern subtleties. Its roof is covered in solar panels and the building’s timbered exterior, providing excellent insulation, ages beautifully with time from a rosy orange to a silver grey. The hotel was christened ‘La Fabrique du Pré Maho’, meaning The Factory on Mr. Maho’s Field.
The sturdy interior features unpolished wood in the rooms and slate tiles in the bathrooms. The oriental bed linen is of the highest quality. The suite and the apartment also have a domotica screen to control heating, music and radio, as well as an iPod docking station. The split level apartment is situated on the top floor. The spacious living room has breath taking views of the surrounding countryside. Eight people can dine in the ultramodern kitchen with kitchen island. The upstairs master bedroom has an ante chamber, large enough to accommodate four guests. The bathroom, tiled in with marble, has a separate double shower unit and a bath-with-a-view.
The hotel is situated near Maxime Collard’s restaurant, La Table de Maxime. Chef Maxime Collard gained experience in Les Forges du Pont d’Oye in Habbay la Neuve and as sous chef with Geert van Hekke in De Karmeliet in Bruges. Innovative cuisine is served with tradition and a hint of creative flair, utilizing the finest locally sourced ingredients. Fine products and pure taste are important pillars in his kitchen.

The hotel is situated in the village of Our, Paliseul, in the very heart of the Belgian Ardennes region. The river Our surrounds the village on two sides. Two arched bridges with finely carved stone give access to this charming village. The old, low houses are constructed with local granite and slate roof tiles. The rolling forested hills, sheep and cows dominate the idyllic Ardennes landscape.
